We are excited to announce that Wildflower Gold Blend #29 will be available online and for take-away/collection from 12pm (Sydney time) on Friday 4 December 2020.
Gold is a blended, barrel aged Australian Wild Ale. Gold Blend #29 is a blend of six barrels - 1602 (13 month old Gold), 1726 (7 month old Gold), 1779 (16 month old Gold), 1832 (15 month old Gold), 1844 (11 month old Gold) and 1905 (10 month old Gold).
At release this blend has an intense nose with lots going on... Big citrus lift, solid funk, noticeable creamy oak – engaging and complex. Palate flows naturally from the nose, robust and full, quite layered, citrus and cellar funk mesh really well... becomes savoury, textural and complete. Savoury finish, spice and oak but still showing a citrus pop with the generous acidity. For those that track them, this is a good one.
The base beer is brewed entirely with Organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw Red wheat with Organic Schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 28 June 2020 and naturally conditioned through refermentation for 22 weeks. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).
Like all our beers, Gold Blend #29 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
