Foggy Morning #5 - Tasting Notes

Wildflower Foggy Morning Batch #5 will be available online and for take-away/collection at our cellar door from 12pm (Sydney time) on Friday 3 December 2021.

Foggy Morning is an Australian Wild Ale made with 100% smoked malt from Voyager Craft Malt, Whitton NSW. This will be the final release of Foggy Morning. It uses conventionally grown grain and since March 2020, was the only exception to us working with entirely certified organic grains. This is something we feel very strongly about at Wildflower and whilst we're always sad to say goodbye to a beer, the innumerable benefits of using grains grown by regenerative organic farmers and malted in a carbon-zero malthouse are too hard to ignore. 

This fifth and final batch of Foggy Morning was brewed in February 2021 and rested in barrel for five months before selection, blending and bottling in July 2021. At bottling it was 5.0% ABV and 2.4P (1.010 SG).

Batch #5 opens with big smoke, charred orange peels, kindling and smoked bacon. A full palate...upfront orange and smoked apple. Creamy before a mouthwatering acid line driving to a smoked ham and campfire ash finish. 

Artwork for the label was water coloured by my wife Bernadette.

Like all our beers, Foggy Morning is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
