Foggy Morning #5 - Tasting Notes

Wildflower Foggy Morning Batch #5 will be available online and for take-away/collection at our cellar door from 12pm (Sydney time) on Thursday 21 Aug 2025.

Foggy Morning is an Australian Wild Ale made with 100% smoked malt from Voyager Craft Malt, Whitton NSW.

This batch (blend) is a small composition of only 500 litres made using Mountain Ash smoked Malt. It was brewed in early 2025, fermented using wild yeast and bacterial wholly foraged from native wildflowers in NSW and then transferred to a single 500 litre puncheon for ageing. There it rested for four months, a new process for Foggy Morning for us, which softened the spice of the fresh smoke character and rounded the beer. On 7 May 2025 it was put to bottle to naturally carbonate and condition for three months before release.

Batch #5 has a wonderful creamy, saline texture that rounds the intensity of the smoke. In contrast to previous renditions of this beer, this blend bears a softness from its ageing in barrel. Nonetheless, its a wonderfully complex and intense beer which will no doubt divide its drinkers between those that love it and otherwise.

Like all our beers, Foggy Morning is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
