Wildflower Amber Blend #3

.

We are excited to announce that Wildflower Amber Blend #3 will be available at our cellar door and online (at 9am) on Saturday 15, July 2017. Amber is a blended, barrel aged Australian Wild Ale. Blend #3 is a blend of two barrels, 1703 and 1718. The beer in 1703 was brewed in early January 2017 and racked into the barrel in the middle of the month. The wort for this beer was quite pale and picked up colour from a 3 hour boil. At blending, the barrel was was tasting similar to its sister 1704 which was in Blend #2. 1718 was filled with our second batch of Amber brewed in the middle of February. Over its three months in barrel, the roasty flavours integrated more fully to be slightly richer...

Wildflower Gold Blend #4

We are excited to announce that Wildflower Gold Blend #4 will be available at our cellar door and online (at 9am) on Saturday 15, July 2017. Gold is a blended, barrel aged Australian Wild Ale. Blend #4 is a blend of two barrels, 1601 and 1714. The beer in 1601 was from our first ever batch of Gold, and 1601 was actually the first barrel we ever racked into here at Wildflower, so how about that, it spent over 5 months in oak. At blending, this barrel was showing the creamy, moreish, savoury barrel character signs I wanted as a background for Gold. The acid levels were pretty subdued and it had a nice subtle roundness. 1714 was from our third batch of Gold brewed on Feb 2,...

Process e2: Wild yeast wrangling

.

This is the second post in an ongoing series. This series, 'Process', focuses one-by-one on specific elements of how we make our beer. The first post on fermentation geometry can be found here. The undeniable distinction of our beers is their yeast characteristic. As we have mentioned before, all of our beers at Wildflower are fermented with a mixed culture of brewers yeast along with a host of wild yeast that we foraged from around New South Wales, Australia. This means that our beers will taste like no other, because no other brewers use the same diverse mixture of native yeast as we do. We know a number of brewers who are making beers with wild yeast, but they have captured different...

Wildflower Amber Blend #2

.

We are excited to announce that Wildflower Amber Blend #2 will be available at our cellar door and online on Saturday 3, June 2017. Amber is a blended, barrel aged Australian Wild Ale. Blend #2 is a blend of two barrels, 1704 and 1716. The beer in 1704 was brewed in early January 2017 and racked into the barrel in the middle of the month. The wort for this beer was quite pale and picked up colour from a 3 hour boil. At blending, the barrel was showing a more developed acidity than its sister (1702 which was in Blend 1) and a little more moderated funk. 1716 was filled with our second batch of Amber (a slightly different, darker wort) brewed in the middle of February.  Over its...

Wildflower Gold Blend #3

We are excited to announce that Wildflower Gold Blend #3 will be available at our cellar door and online on Saturday 3, June 2017. Gold is a blended, barrel aged Australian Wild Ale. Blend #3 is a blend of two barrels, 1726 and NoSai. The beer in 1726 was brewed on 27 February 2017 and racked into the barrel on the last day of that month. At blending, this barrel was showing great signs of both our house culture and a fresh example of Gold. It had a subtle acidity while still displaying fresh lime and citrus characteristics. NoSai, the sister of sponsai in Blend #1, was brewed clean and remained intentionally uninfected for the majority of its life. Alone, the beer was quite oaky with...

Wildflower Gold Blend #1

.

We are excited to announce that Wildflower Gold Blend #1 will be available online and at select locations from Thursday 20 April, 2017. Gold is a blended barrel aged Australian Wild Ale. Blend #1 is a blend of two barrels, 1602 and SponSai. 1602 is the second barrel we filled in the year 2016 (this is how we denote the barrels at Wildflower). The beer was brewed in late December 2016 and racked into the barrel on the last day of that year. This barrel was a superior example of what our house culture of brewers yeast and native wild yeasts shows. It has lent to the blend significant funk, moderate acidity and interesting fermentation characteristics. SponSai has a great history best told in person. The beer...

We are excited to announce that Wildflower Amber Blend #1 will be available online and at select locations from Thursday 20 April, 2017. Amber is a blended barrel aged Australian Wild Ale. Blend #1 is a blend of two barrels, 1702 and 1717. The beer in 1702  was brewed in early January 2017 and racked into the barrel in the middle of the month. The wort for this beer was quite pale and picked up colour from a 3 hour boil. At blending, the barrel was showing a lot of acid complexity that lent to the blend the moderate tartness we aim for in the Amber. 1717 was filled with our second batch of Amber (a slightly different, darker wort) brewed in the middle of February.  In its spent...
