Hive: Post Brood Blend #11

An ongoing collaboration with our friends and honey superstars Tim and Emma from Malfory's Gold honeyHive: Post Brood is a barrel aged golden mixed culture ale refermented with natural formed Warré hive post-brood wild comb from the Blue Mountains and Central Tablelands of NSW.

Topher's production notes

Made by refermenting Tim and Emma's honeywax with our aged Gold in April 2024 and bottling with their honey as priming in July 2024. Bottles are then sealed with the rendered wax which once fermented with the beer and released in April 2025, conditioning in bottle for 9 months. Our tasting notes 

Familiar Blue Mountains polyflora aromas of pine needles and fresh resin with pollen high notes. This blend smells super fresh, akin to when we receive the honeywax and first open the pail… with the stickier, darker notes there but accentuated by lighter more floral overtones. The palate is dry and moreish. A full body for this blend not showcasing a large acid profile, instead a long finish with the Hive trademark apparent sweetness.

Like all our beers, Hive: Post Brood Blend #11 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
