Anchovy Toast 2025

We’re pleased to release the second edition of our collaborative kvass-inspired, very hoppy brew with our buddies Fast Fashion (Seattle, USA) in anticipation of their visit.

We’ve also done a re-run of the incredibly popular tee-shirts from this first brew 2 years ago, which, will are available at Cellar Door and online right about now.

Anchovy (the beer) is vegan friendly, no fish were harmed in its making, rather…. this beer was mashed over A P Barkery loaves (which the friendly team there saved up their overbake for weeks) to imbue the mash with a certain salinity and texture often present in kvass (beers made from old bread generally). Then in the kettle, the beer was hopped heavily with Fast Fashion’s proprietary Segal Hop Ranch watermelon-jollyrancher-vibey hop which is named ‘Anchovy’ because it pairs so nicely with pizza (rather than it containing anyfish )

This beer was brewed in December 2024 with hyper-fresh 2024 Anchovy hops shipped from Washington to my parents house in Texas which they then carried with them in their luggage when they visited Aus for Christmas… They brought with them a remarkable 20kg of hops, thank you mom and dad for making this happen.

Bottled in January 2025, the beer has aromas of fresh basil, pine, cut grass, lime juice and toasted vanillin biscuits, tropical fruit characters come in late to yield an overwhelmingly fresh and complex hop driven nose. The palate shows the pine, grassiness and raspberry characters. It moves quickly bursting with flavours before fading to a moreish, quite textural finish. Clean bitterness and toasty grains to close. Very enjoyable. The hop seems incredibly fresh. Really nice finish.

Anchovy is available on tap at Brompton St, on our website and soon to a bottleshop, bar or restaurant in Australia near you.
