St Phoebe is a golden barrel aged ale wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW refermented with with plums.
In 2025, St Phoebe was made by blending barrel aged golden mixed culture fermentation ale with 982kg of fresh, whole, tree ripened, Ebony Sun plums from Thornbrook Orchard in Nashdale, NSW. After a five month maceration and refermentation of fruit and beer, it was bottled and allowed to naturally carbonate and mature before release.
The label artwork was done by Phoebe's auntie, Bernadette.
Nemesia's tasting notes: A brilliant deep red in the glass, the nose of this iteration of St Phoebe is all sweet, perfumed fruit, leading with red currants and cranberry. On the palate, you get the full spectrum of sweet, tart plum, flesh and skin. The fruit character is rounded with a restrained acid profile, reminiscent of pomegranate, with an earthier rhubarb bitterness on the finish and some vanillin oak. A really elegant expression of the beautiful Ebony Sun plums from Thornbrook Orchard..
