Wildflower Gold Blend #25 - Tasting Notes

We are excited to announce that Wildflower Gold Blend #25 will be available online and for take-away/collection from 12pm on Friday 5 June 2020.

Gold is a blended, barrel aged Australian Wild Ale. Gold Blend #25 is a blend of five barrels - 1724 (7 month old Gold), 1726 (5 month old Gold), 1729 (10 month old Gold), 1744 (9 month old Gold) and 1738 (11 month old Gold).

This blend of Gold showcases some more aged elements of our cellar. Its aromas open with a funky older nose, deep and broody. Citrus, blossom and straw notes are pushed to the background by spicy and savoury oak elements. The palate is driven and focused. Oak elements shine with support from lemon citrus/curd flavours. Long, persistent and complex. An engaging “wintery” gold blend. This is really captivating. More noticeable spicy oak than our usual Gold blend but very interesting with some American brett elements on the back palate.

The base beer is brewed entirely with New South Wales cereals: Single Origin (S.O.) Moree NSW grown Gairdner ale malt and North Star NSW grown Spitfire S.O. raw wheat thanks to Provenance Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 12 December 2019 and naturally conditioned through refermentation for 25 weeks. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).

Like all our beers, Gold Blend #25 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
