We are excited to announce that Wildflower Foggy Morning #3 will be available online and for tasting and take-away/collection at our cellar door from 12pm (Sydney time) on Friday 6 November 2020.
Foggy Morning is an Australian Wild Ale made with 100% smoked malt from Voyager Craft Malt, Whitton NSW. This third iteration of the beer utilises Red Gum for its smoke character rather than the stringy bark smoke which the first two editions were made with. To us, this has leant a more peaty aroma to start than the campfire overtones of the first two.
This third batch of Foggy Morning was brewed in early January 2020 and rested in barrel for 7 months before selection and blending in August. At bottling it was 4.5% ABV and 2P (1.008 SG).
At release after three months conditioning, this edition of Foggy Morning shows a strong peaty nose with elements of bacon and ash. The palate is refined with a balance of smoked bacon, orange citrus and campfire. Dry, compact and intense but with a surprising softness on the finish.

Like all our beers, Foggy Morning is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
