Gold Blend #36 - Tasting Notes

Wildflower Gold Blend #36 will be available online and for take-away/collection from 12pm (Sydney time) on Friday 3 June 2022. 

Gold is a blended, barrel aged Australian Wild Ale. Gold Blend #36 is a blend of five barrels, 1850 (8 month old Gold), 1854 (11 month old Gold), 1906 (13 month old Gold), 1915 (16 month old Gold) and 1916 (15 month old Gold).  

This blend has an extremely fruity nose, apricot and stone fruit to the fore. There’s creamy oak combining with hop spice, green melon and citrus to give a mouth watering sherbety pop. Big ripe fruits on the palate, it’s juicy (for us) but matched by a structural and delicious oak line. The citrus arrives late, lemons and limes that carry the palate to its conclusion. It’s compact but lively and energetic, a cracker blend!

The base beer is brewed entirely with certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw Red wheat with Organic Schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Organic Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 3 November 2021 and naturally conditioned through refermentation for 7 months. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).

Like all our beers, Gold Blend #36 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
