Gold Blend #35 - Tasting Notes


Wildflower Gold Blend #35 will be available online and for take-away/collection from 12pm (Sydney time) on Friday 1 April 2022. 

Gold is a blended, barrel aged Australian Wild Ale. Gold Blend #35 is a blend of 5 barrels, 1711 (15 month old Gold), 1777 (17 month old Gold), 1859 (11 month old Gold), 1861 (12 month old Gold) and 2048 (10 month old Gold).  

Truly a good expression of our beer. Aromas of pear skin, zesty lemon, brown spice and sweet gentle vanilla. Toasty warm oak and spiced citrus. There’s a lovely warmth to the nose. Very balanced. Upfront limey citrus drive complemented by cellar funk, a mid palate showing hop spice and pops of melon and stone fruit. Delicate acid with a savoury, earthy finish.

The base beer is brewed entirely with certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw Red wheat with Organic Schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Organic Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 25 August 2021 and naturally conditioned through refermentation for 7 months. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).

Like all our beers, Gold Blend #35 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
