We are excited to announce that Wildflower Gold Blend #31 will be available online and for take-away/collection from 12pm (Sydney time) on Friday 9 April 2021.
Gold is a blended, barrel aged Australian Wild Ale. Gold Blend #31 is a blend of 6 barrels, 1842 (9 month old Gold), 1854 (12 month old Gold), 1862 (7 month old Gold), 1723 (10 month old Gold), 1766 (10 month old Gold) and 1769 (9 month old Gold).
At release, this blend has aromas of lemon/lime citrus, white blossoms and soft creamy floral elements. Sweet grainy shortbread notes add good complexity. The palate is seamless. Hop spice upfront tempered with red grapefruit citrus flavours and poppy carbonation. Clean bitterness gives length. A balanced and controlled blend. Great match with food, not aiming to take centre stage.
The base beer is brewed entirely with Organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw Red wheat with Organic Schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 25 November 2020 and naturally conditioned through refermentation for 19 weeks. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).
Like all our beers, Gold Blend #31 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
