Amber Blend #39

Wildflower Amber Blend #39 will be available online and for take-away/collection from 12pm (AEST) on Friday 5 May 2023.

Amber is blended, barrel aged mixed culture ale which is well cellared, rounded, malt-accentuated. We select and blend well developed barrels for a beer with a desired malt forward and matched acidic character. The slightly heavier characteristics of this beer make a fantastic complement to food and offer a variety of flavours to both compare and contrast in pairing.

Amber Blend #39 is a blend of five barrels, 1720 (11 month old Amber), 1801 (20 month old Amber), 1750 (21 month old Amber), 1704 (25 month old Amber) and 1713 (10 month old Amber).  

Luke's tasting notes (unedited) - Just. fkn. lovely! Bright red currants, malt and cola. Warm and comfortable. Cacao and brown sugar. The palate is rich and flavoursome with sarsaparilla, vanilla and brown spices at the fore. Raisins and figgy sweetness meld with the typical hazelnut finish. Tempered acidity gives the beer more weight, texture and richness. A beautifully balanced Amber blend. 

The base beer is brewed entirely with certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw Red wheat with Organic Schooner barley malted to Munich, Vienna and chocolate roasts by Voyager Craft MaltIt is made with filtered Sydney water, Organic Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture of foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 22 February 2023 and naturally conditioned through refermentation for 10 weeks. At bottling it was 6.0% ABV, 18 IBU and 1.8°P (FG = 1.007 SG).

Like all our beers, Amber Blend #39 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
