Wildflower Gold Blend #13- Tasting Notes

We are excited to announce that Wildflower Gold Blend #13 will be available at our cellar door and online (at 1pm) on May 4, 2018.

Gold Blend #13 opens with a classic WF nose of citrus blossom, musk and straw which moves into a oatmeal almond meal character quite quickly. Second sniff hinted more grapefruit and resiny dry hop notes. Very structural palate with some Chablis-like minerality. Focussed and taut, citrus zest and pithiness. Finishes with a noticeable bitterness on the back palate similar to bitter lemon or ginger spice.

Gold is a blended, barrel aged Australian Wild Ale. Blend #13 is a blend of four barrels. 1760 (6 month old Gold), 1744 (6 month old Gold), 1723 (5 month old Gold) and 1721 (6 month old Gold).

The base beer is brewed entirely with New South Wales cereals: Single Origin (S.O.) Moree, NSW grown Gairdner ale malt and North Star, NSW grown Spitfire S.O. raw wheat thanks to Provenance Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on February 22 2018 and naturally conditioned through refermentation for 10 weeks. At bottling it was 5.0% ABV, 25 IBU and 0.8°P (FG= 1.003 SG).

Like all our beers, Gold Blend #13 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
