Wildflower Gold Blend #11- Tasting Notes

We are excited to announce that Wildflower Gold Blend #11 will be available at our cellar door and online (at 1pm) on Friday 2, March 2018.

Gold Blend #11 opens with stonefruit kernel, orange citrus zest and funky undertones. The nose is somewhat fuller than a typical WF Gold nose. The palate is rounded with a lot of upfront texture and palate weight. Lemon core drives palate along with flavours of nectarine and fleshy peach and finishes dry with noticeable clean bitterness. We think it looks bit like Blend #9, with pretty intense palate and hints of tropical fruits.

Gold is a blended, barrel aged Australian Wild Ale. Blend #11 is a blend of five barrels. 1602 (9 month old Gold), 1703 (7 month old Gold), 1705 (A barrel of reclaimed Gold Blend #2), 1724 (9 month old Gold) and 1735 (7 month old Gold).

The base beer is brewed entirely with New South Wales cereals: Single Origin (S.O.) Moree, NSW grown Gairdner ale malt and North Star, NSW grown Spitfire S.O. raw wheat thanks to Provenance Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on December 6 2017 and naturally conditioned through refermentation for 12 weeks. At bottling it was 5.0% ABV, 25 IBU and 0.8°P (FG= 1.003 SG).

Like all our beers, Gold Blend #11 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
