Wildflower Amber Blend #4- Tasting Notes

We are excited to announce that Wildflower Amber Blend #4 will be available at our cellar door and online (at 9am) on Saturday 12, August 2017.

Amber is a blended, barrel aged Australian Wild Ale. Blend #4 is a blend of two barrels, 1604 and 1715. The beer in 1604 was brewed in early April 2017 and racked into the barrel on the 7th of the month. 1715 was filled with our second batch of Amber brewed in the middle of February.

The aroma of this blend has notes of wet stone minerality, tidal pool seaweed, chocolate, toast, cocoa powder with emerging aromatics of bready, yeasty/chocolate cake-mix.

The palate is generous with emerging roasted/cooked spice, sweet malt, red fruits (especially cherry liquor), and a balanced, rounded acidity. It finishes with a clean oaky, tea-like end. As the beer warms and opens up, its nutty barrel characters of almonds and oats are very prominent.

Overall this blend has turned out to be slightly tarter than pervious Amber blends. If you are partial to Flanders Red Ales, this could be a blend for you.

The base beer is brewed entirely with New South Wales cereals: Single Origin (S.O.) Moree, NSW grown Gairdner ale malt and North Star, NSW grown Spitfire S.O. raw wheat thanks to Provenance Malt, as well as Riverina grown Janz S.O. raw wheat, Binya, NSW grown S.O. LaTrobe vienna malt and Riverina grown chocolate malt from Voyager Craft MaltIt is made with filtered Sydney water and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on June 15 2017 and naturally conditioned through refermentation for 8 weeks. At bottling it was 6.0% ABV, 15 IBU and 1.6°P (FG= 1.007 SG).

Like all our beers, Amber Blend #4 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
