Tom 2021

We are excited to announce that Wildflower Tom 2021 will be available online and for take-away/collection at our cellar door from 12pm (Sydney time) on Friday 3 December 2021.

Tom is a table beer made with sour Morello cherries from St Thomas 2021 and St Thomas 2020.

This year we changed things up a little bit with Tom and included a handful of other cherry-dominated or cherry derivative ferments. This ended up meaning a year-old puncheon of beer directly fermented on cherries from St Thomas 2020 made it into Tom as well as a 225 litre barrel of heavily fruited Amber base beer that was pulled out of the St Thomas 2021 blend to bring it into better composition. There are others too, but really, don't think too hard.

The nose opens with floral elements... violets and potpourri with a bretty cherry lift. Noticeable orange and cranberry notes. The body is fuller than previous editions. Smooth and textured up front, red creaming soda and savoury cherries. A gentle fruit sweetness and woody funk to close. ABV is 4.1%.
