Topher's production notes
During harvest we made a quick trip up to the Hunter Valley to collect the skins the morning after Tim’s late-night pressing, brought them back to Marrickville and soaked them for six months on both fresh and aged Gold brewed with regenerative organic grains wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW.
This extended maceration lends the beer both tannin and colour from this unique variety. A sparkling red (ale) fit for the Christmas table.

The base beer is brewed entirely with certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw red wheat with organic schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Motueka (NZ) hops. Finally, it was fermented with our house culture of microflora wholly foraged from native flowers in NSW. It was bottled oin August 2023 and naturally conditioned through refermentation for 4 weeks. At bottling it was 5.9% ABV and 10.0°P.
Meesh's tasting notes
Visually you'll fall in love. The nose is super vinous, and rich. Despite the apparent sweetness of the aroma, the palate is quite structural with a nice fruit weight and a delicious tannin. A fun and flirty addition to the Christmas table.
Like all our beers, Lambrewski is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
