An ongoing collaboration with our friends and honey superstars Tim and Emma from Malfory's Gold honey, Hive: Post Brood is a barrel aged golden mixed culture ale refermented with natural formed Warré hive post-brood wild comb from the Blue Mountains and Central Tablelands of NSW.
This next Hive makes use of Post Brood comb from a very rare Red Stringybark honeyflow event. Tim always says it best, and you can read about this here, but this honey itself has notes of lemon myrtle and ginger to taste with distinct floral lift, some exotic spice, lots of caramel and toffee, almost rose hip tea-like characters, sweet but with that similar earthiness of the bouquet

Made by refermenting Tim and Emma's honeywax with our aged Gold and bottling with their honey as priming. Bottles are then sealed with the rendered wax which once fermented with the beer. For more information on our process to make this beer, please see this article.
Our tasting notes
The aroma just jumps out of the glass. It's bursting with florals, immediately followed with spices, clove and ginger, and a richer caramel note. There's perfumed citrus there too, a freshness. The palate is silky and full, the waxy character caressing your tongue. It evolves all the way along to the back of the palate where it finishes with a gentle tannic texture.
Like all our beers, Hive: Post Brood Blend #9 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
