An apricot ale so nice it’s been embellished with a unicorn under a rainbow in a sky of diamonds. I’ve held on to this doodle of Florence’s for a beer that’s equally rad. We are excited to share this one with you this Friday 6 May at noon.
A spin off from St Henry, this ale is a blend of golden beers aged with apricots. One base was turbid mashed, boiled with aged hops and barrel aged for a year with the other base being aged Gold.
Both beers saw extended macerations with apricots after making St Henry 2021 using apricots from Thornbrook Orchard in Nashdale and Yarralee Orchard outside Bathurst.
At release we get a sweet, fruit heavy nose of apricot, guava, citrus… sherbet fizz and nose tickling spices. Intense yet controlled with more savoury fruit tones at the back. Layered palate with fruit across the board, perfumed stonefruit and citrus. Hints of pink fruit and confectionery. Aged hop bitterness on the back palate creates a wonderful vinous-like grip and bitterness that’s ever so moreish. There’s a cleansing acidity but the beer is persistent long after the sip.
Like all our beers, Henrietta is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
