Gold Blend #39

Wildflower Gold Blend #39 will be available online and for tasting and take-away/collection at our cellar door from 12pm (AEST) on Thursday 6 April 2023

Gold is a soft, balanced barrel aged ale wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. Gold Blend #39 is a blend of five barrels, 1728 (22 month old Gold), 1731 (17 month old Gold), 1763 (14 month old Gold), 1836 (16 month old Gold) and 1852 (12 month old Gold).  

Luke's tasting notes - Beautiful beautiful nose that screams nectarines/passito soda. By far the best Gold nose for a very long time. Almost perfect, such complexity but vibrancy as well. The palate is equally delicious. Light and delicate orange citrus juice and mild stonefruit glide across the palate. There's a touch more funk and the oak provides some extra length but it finishes full of fruit albeit a touch succinctly.  

The base beer is brewed entirely with regenerative certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw red wheat with organic schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Organic Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 7 June 2022 and naturally conditioned through refermentation for 10 months. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).

Like all our beers, Gold Blend #39 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
