Gold Blend #34 - Tasting Notes

Wildflower Gold Blend #34 will be available online and for take-away/collection from 12pm (Sydney time) on Friday 4 February 2022. 

Gold is a blended, barrel aged Australian Wild Ale. Gold Blend #34 is a blend of 5 barrels, 1779 (12 month old Gold), 1834 (7 month old Gold), 1844 (12 month old Gold), 1908 (9 month old Gold) and 2009 (14 month old Gold).  

At release, it has super zesty aromas, mandarin and melon, a brightness with hoppy spice giving some added lift. The palate is full of youthful energy, a citrus juice core of lemon and lime... gentle sea spray impression that tracks the palate leading to a sweet berry back palate finishing with hints of vanilla and stone fruit. 

The base beer is brewed entirely with certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw Red wheat with Organic Schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 17 June 2021 and naturally conditioned through refermentation for 7 months. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).

Like all our beers, Gold Blend #34 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
