Ambrosia: Gentian

Wildflower Ambrosia: Gentian will be available online and for take-away/collection at our cellar door from 12pm (Sydney time) on Friday 7 October 2022.

Ambrosia: Gentian is the second cuvee in a series of beers taking inspiration from the herbs, fruits and spices used in apéritifs and digestifs. This Gentian version wholly exposes and celebrates the intense, clean bitterness of gentian root in conjunction with the aromatics of wormwood.

Floral, pollen like herbaceousness, earthy spices and creamy raw nuts on the nose… vinous citrus, sweet fruits and spicy oak harmonise in the background.  Earthy and grassy palate, brown spices and flavours of ginger and sweet citrus running through core. The unmistakable gentian derived bitterness comes racing though invoking flavours and impressions of negronis and amaro. It’s firm… but balanced. The aroma invokes a childhood memory for Luke watching his dad play polocrosse and wearing daisy chains made from cape weed flowers.

And like all our beers, Ambrosia: Gentian is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
