Wildflower Ambrosia: Amaro 2023 will be available online and for tasting and take-away/collection at our cellar door from 12pm (AEST) on Friday 1 September 2023.
Ambrosia: Amaro 2023 is the third cuvee in a series of beers taking inspiration from the herbs, fruits and spices used in apéritifs and digestifs.

Oh man just look at that beer. This past weekend I was in Melbourne for a few events and while at Mr West we tapped a keg of Ambrosia: Gentian from last year. Having a glass of that alongside little tasters of Suze was a herbal, bitter delight.
While the Gentian release was a little more intense, this Amaro version carries a little more sweetness and rounded flavour from the fruit. These Ambrosia named beers take inspiration from the herbs, fruits and spices used in apéritifs and digestifs. They came about last year for the first time over many discussions and knowledge sharing sessions with our friends at Poor Toms.
This 2023 version was made with a barrel aged base beer brewed with gentian and wormwood in the kettle. This was married with stemmed and destemmed morello sour cherries and freshly pressed Pinot Noir skins from M&J Becker in the Hunter Valley NSW.
Luke's tasting notes
Lifted vinous aromas of strawberry and raspberry alongside funky oak and dark spice. High notes of plum and toasted bread add a lovely complexity. Subtle yet engaging palate. Restrained flavours that slowly grow. Red fruits initially before a structured mid palate showing oak and stemmy herbal flavours. A savoury palate amplified by the negroni like bitterness that cleans the palate.
Like all our beers, Ambrosia: Amaro 2023 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
