Amber Blend #36 - Tasting Notes

Wildflower Amber Blend #36 will be available online and for take-away/collection from 12pm (Sydney time) on Friday 5 August 2022.

Amber is a blended, barrel aged Australian Wild Ale. Amber Blend #36 is a blend of five barrels - 1754 (14 month old Amber), 1717 (15 month old Amber), 1764 (17 month old Amber), 1747 (9 month old Amber) and 1720 (6 month old Amber).  

A blend of five barrels aged 14, 15, 17, 9 and 6 months. This latest blend has a beautiful sweet nose of soft caramel, malt and toasted bread. It’s enveloping, with warm oak and brown spices. A palate lined with sweet raisins, vanilla and cocoa. It’s full and complex, nutty and malty with a firm oak spice complementing the classic Amber acidity.

The base beer is brewed entirely with certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw Red wheat with Organic Schooner barley malted to Munich, Vienna and chocolate roasts by Voyager Craft MaltIt is made with filtered Sydney water, Organic Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 7 April 2022 and naturally conditioned through refermentation for 17 weeks. At bottling it was 6.0% ABV, 18 IBU and 1.8°P (FG = 1.007 SG).

Like all our beers, Amber Blend #36 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
