Amber Blend #31 - Tasting Notes

Wildflower Amber Blend #31 will be available online and for take-away/collection from 12pm (Sydney time) on Friday 4 June 2021.

Amber is a blended, barrel aged Australian Wild Ale. Amber Blend #31 is a blend of four barrels - 1704 (9 month old Amber), 1727 (10 month old Amber), 1754 (11 month old Amber) and 2008 (11 month old Amber). 

At release blend #31 shows panela, candied cherry, currants and dried fruits, sourdough crust. Lifted raspberry, blueberry jam notes give huge complexity. Strong palate brimming with sweet fruitcake, graham cracker and sour cherry. Tempered acidity allows a generous mid palate sweetness to shine.

The base beer is brewed entirely with Organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw Red wheat with Organic Schooner barley malted to Munich, Vienna and chocolate roasts by Voyager Craft MaltIt is made with filtered Sydney water and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 24 February 2021 and naturally conditioned through refermentation for 14 weeks. At bottling it was 6.0% ABV, 18 IBU and 1.9°P (FG = 1.008 SG).

Like all our beers, Amber Blend #31 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
