Wildflower Spring 2023 will be available online and for tasting and take-away/collection at our cellar door from 12pm (AEST) on Friday 1 September 2023.
Spring is a seasonal ale made with meyer lemon, Poormans orange, regenerative organic grains and organic whole cone Motueka hops fermented with our mixed house culture wholly collected from native flowers in NSW.
Topher's production notes
Poormans Orange is sort of a cross between a pomelo and a grapefruit in flavour, it's beguiling though. Grown by Peter Dryden near Wollemi it's not something you'd stumble upon normally, as with most of Peter's citrus the are rather unique.
We used the whole fruit cold-side to make this beer, while there was some citrus hot-side, the real impact in the glass comes from the 120kg of fruit which was juiced whole and added before bottling. Juicing it whole meant the pith flavour and bitterness makes an impression on the beer just as I wanted. Actually, we only lightly hopped Spring in the kettle with the knowledge and expectation it would gain some from the juice.
Like last year's release, Spring '23 is just stupidly tasty.
Luke's tasting notes
Bright and intense citrus nose. Zesty oils and fresh juice aromatics backed by a pithy spice punch. It’s a youthful, raw and extremely assertive expression of fruit, whilst being entirely approachable. The palate is compact and intense, all upfront juice and downtown zest and pithy bitterness giving length and a cleansing finish. It’s simple and wonderfully brash in its youth but will reward some time in the cellar developing complexity akin to a wit-beer.
Like all our beers, Spring 2023 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
