Topher's production notes
Made in collaboration with M&J Becker Wines (Pokolbin NSW), Sensation of Colour is a golden barrel aged ale wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW macerated on Pinot Noir and Pinot Meunier pomace.
Like many of our beers aged on pressed grape skins (pomace) the name makes reference to René Descartes’ philosophies on optics and colour.

The base beer is brewed entirely with certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw red wheat with organic schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Motueka (NZ) hops. Finally, it was fermented with our house culture of microflora wholly foraged from native flowers in NSW. It was bottled in August 2023 and naturally conditioned through refermentation for 4 months. At bottling it was 5.4% ABV and 10.0°P.
Meesh's tasting notes
A gorgeous blush pink in the glass. Candied red fruit on the nose, pomegranate and strawberries. On the palate, it leads with sweetness but is swiftly met with a white pepper tannin. Cherry cola.
Like all our beers, Sensation of Colour 2023 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
