Wildflower Dreamin Batch #2 will be available online and for take-away/collection at our cellar door from 12pm (AEST) on Friday 4 August 2023.
Unfiltered and bottle conditioned, Dreamin' showcases the younger side of our mixed house culture wholly collected from native flowers in NSW. Dreamin' sits alongside beers like Vibe and Serenity (just trying to keep the Castle references alive) and is an ale made with regenerative organic barely and wheat, hopped generously in the kettle and dry-hopped with organic Motueka. It's super clear, decently rustic with a full mouthfeel. A really stripped back beer, we are loving it.
Topher's production notes
I immediately regretted releasing the first batch of this beer... it was both far too small a volume and far too delicious to run out of. I created a monster by accident... another beer I need to brew & bottle at a frequency which match demand... I don't think I'll ever be able to do it.
On its first weekend on tap at cellar door, we blew through nearly 100 litres, which is insane for us. Jugs upon jugs of it were going out... and our team kept helping themselves off the taps during the week and, well, we ran out in a number of weeks so this second batch was put into production as soon as I could.
I mean, I understand... a dry hopped wheat saison with motueka all the way... it's a mixed culture, regen organic beer with all the markings of a modern-day drinker. A dry pillowy mouthfeel coupled with mojito, fruity esters... I sort of hate how approachable it is while at the same time love it for that.
In March, we had friends from the States over and they pointed out how much it reminded me of early Jolly Pumpkin Bam Biere. I hadn't seen the resemblance until then but take that as a massive compliment. An everyday drinker, more and more the ales I am keen to put out into the world.
This second batch is special too as it is made, and dry-hopped entirely with 2023 organic Motueka flowers... no pelletised hops in this one as we have moved away from them, opting for whole cone hops instead. This batch has a real Kernel (London) feel to it, the hops have a weight & texture which are distinctly from the flowers. But the issue with this is that we only have one 1,500 litre tank we can dry hop with flowers in and, thus, the batch side of Dreamin' is limited to this. To be honest, I think I'll like that going forward, keeping this beer fresh-as and releasing it more often.
Luke's tasting notes
Wonderfully lifted hoppy nose, floral, juicy citrus, pops of pear and a resiny punch. Soft white blossoms and a creamy grain edge... bright and uncomplicated but beautifully engaging. Clean simple lines across the palate, hop flavours and citrus... a lovely mid palate weight that leads to a firm cleansing bitterness.
Like all our beers, Dreamin Batch #2 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
