Rose Gold 2020
Rose Gold 2020
A return of one of our favourite beers from the 2019 Collective, Rose Gold 2020 is a golden barrel aged Australian Wild Ale refermented and macerated with whole, fresh sour Morello cherries from Thornbrook Orchard in Nashdale, NSW.
If you have the chance (or time) to have a read of the St Thomas 2020 blog post, then you will get a sense of what was going on when this beer began. When all of my friends came to help de-stem cherries on Christmas Eve, the first 80kg of them were held separately for Rose Gold. Unlike last year though, this year's version benefits from an all fruit, no stem refermentation which we feel supports the Gold base more (however we do think it would be interesting to have 10-20% of stems in there in future).
A few days after the messy cherry day, we racked barrel 1718 of 1 year of Gold onto the fruit and allowed it to macerate and referement for a whopping 5 and 1/2 months. I really wanted to push the time on this one as long as possible in order to build some of the marzipan nuttiness we can get from the pits. It was bottled on 11 June 2020 and allowed to referment in bottle for 2 months before release. No tasting notes for this one because how many different ways can I say cherry and kriek-like?! It's tasting awesome as it is now, but you will be rewarded for letting it develop for another 4-6 months.
