Patersonia

This is a really lovely and interesting beer.

It's our first coolship inoculated beer to be released outside of our collaborative beer 'Village' made with Mountain Culture. Just as a side note on that beer, we don't really intend to mess with that single release each year. For instance, I don't see us fruiting those beers as we do the 'Sts' as I also do not foresee us releasing any barrels of wort made in Katoomba outside of the Village release.

So, this is a first.

This beer was brewed in the last days of 2021. I remember at the time I brewed the beer in a sort of desperation really. This was during the period where our culture was having issues and we hadn't successfully fermented a batch of beer in months. Honestly, it was tough to come to work each day and not smell freshly fermenting beer or not really feel like we had gotten anywhere with solving the problem.

One day it came to a head and I stubbornly decided to make a coolship inoculated beer in summertime and randomly noticed a somewhat cool evening in the future. I didn't even have grain on site, so I rang the team at Batch (who were also using organic Schooner barley at the time as their base) and pinched some grain, went over to brew and went straight from the kettle into our 1300 litre stainless steel IBC tote.

That evening, it cooled in in the centre of our brewery (here's the video) and the next morning a portion of it was inoculated with culture from a barrel in our stack, but this puncheon was filled straight from the coolship and left to age for 16 months.
