Wildflower Gold Blend #28 - Tasting Notes

We are excited to announce that Wildflower Gold Blend #28 will be available online and for take-away/collection from 12pm (Sydney time) on Friday 2 October 2020.

Gold is a blended, barrel aged Australian Wild Ale. Gold Blend #28 is a blend of 6 barrels - 1702 (13 month old Gold), 1756 (6 month old Gold), 1829 (15 month old Gold), 1852 (6 month old Gold), 1859 (8 month old Gold) and 1924 (7 month old Gold).

At release this bend shows a wonderful nose rich with the culture and some lambic vibes. Sweet funky citrus, dark broody spice. Hints of riper fruit mixed with savoury oak create a super engaging gold aroma. Deeper and darker on the palate. Noticeable full palate bitterness creating structure. Flavours of citrus peel, pine berry and robust earthy spice.

The base beer is brewed entirely with New South Wales cereals: Single Origin (S.O.) Riverina NSW grown Schooner ale malt and Coleambally NSW grown organic Red raw wheat thanks to Voyager Malt & Chris and Sam Greenwood. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 15 April 2020 and naturally conditioned through refermentation for 24 weeks. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).

Like all our beers, Gold Blend #28 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
