We are excited to announce that Tendency to Rotate will be available online and for take-away/collection at our cellar door from 12pm (Sydney time) on Friday 9 April 2021.

Tendency to Rotate is a barrel aged Australian Wild Ale with Moscato Giallo skins from Momento Mori.

In a very brief description of a still-yet-to-be-released collaboration project, we have been receiving grape skins from our friends Hannah and Dane of Momento Mori wines since November 2018 to make beer with. That year I spent my birthday in Gippsland digging out Greco skins from Dane's 'Give up the Ghost 2018' wine which we sent back to Sydney and blended with fresh, unfermented, uninoculated (no yeast pitched) wort. Unfortunately, that beer hasn't yet turned out to our standards for release, but since then we have received four other batches of post-fermentation macerated white wine skins to make beer with. This beer, as is not fermented with our house culture, will be eventually released as its own project (i.e. not under the Wildflower label) and hopefully we should see some this year.

However, last year after using Moscato Giallo skins from their 'Fistful of Flowers' wine to inoculate and macerate during fermentation with beer, we moved this collaboration beer off and blended in barrel 1869 (11 month old Gold). This aged beer sat with the then twice fermented skins for 4 months before we racked it off to bottle this beer.

At release this beer shows a big fruity aromatic nose, pear drop, ripe stonefruit, pineapple lifted by sweet perfumed floral notes. High aromas of grape skin and seed. The palate is compact and intense. The skin derived flavours drive the palate and give beautiful structure. Flavours from the nose are repeated here but with a noticeable citrus line from the aged Gold. Complex yet controlled. 

Tendency to Rotate is bottled into 750ml bottles and 1.5 litre magnum and is 5.2% ABV. We will have 300 bottles [limit of 2 p/p] and 12 magnums [limit of 1p/p] available online on Friday 9 April at 12pm Sydney time as well as 144 bottles and 4 magnums available at cellar door. Sorry no wholesale.
