Wildflower Lambrewski will be available online and for take-away/collection at our cellar door from 12pm (Sydney time) on Friday 2 December 2022.

Made in collaboration with our good friend Tim Ward, this ale was made using lightly pressed Lambrusco Maestri skins from the 2022 harvest grown by Chalmers in Heathcote, VIC. During harvest, we made a quick trip up to the Hunter Valley to collect the skins the morning after Tim's late night pressing, brought them back to Marrickville and soaked them for six months on both fresh and aged ale brewed with regenerative organic grains wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW. This extended maceration lends the beer both tannin and colour from this unique variety. A sparkling red (ale) fit for the Christmas table.

"Tis the season! A rich plum colour that carries to the foam. Sweet red fruit on the nose with a rich raisin character. More savoury on the palate than the nose implies. Big juicy Lambrusco character with just enough tannic grip to make this finish deliciously dry and savoury." - Meesh.  

And like all our beers, Lambrewski is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
