Dreamin' Batch #1

Wildflower Dreamin' Batch #1 will be available online and for tasting and take-away/collection at our cellar door from 12pm (AEST) on Friday 3 March 2023.

An ale brewed with NSW grown regenerative organic barley and wheat, hopped with organic NZ Motueka hops. Unfiltered and bottle conditioned, Dreamin' showcases the younger side of our mixed house culture wholly collected from native flowers in NSW.

Alright alright, I think I'm getting a handle now on our 'new' house culture that we have been using for over a year now following the demise of our original one... see here if you missed that saga.

One of the more exciting things for me about this new culture is how it presents in young beer... well exciting alongside the fact it is wholly composed from yeast and bacteria collected from native flowers in NSW.

When this new culture ferments beer quick and hot, it shows a really tidy, clean phenol positive, saison adjacent character. Cross reference this fact for there being a decent chunk of #greenbottle releases in the past year... but I feel with this release we are honing it in a bit.

Dreamin' sits alongside beers like Vibe and Serenity (just trying to keep the Castle references alive) and is an ale made with regenerative organic barely and wheat, hopped generously in the kettle and dr-hopped with organic Motueka. It's super clear, decently rustic with a full mouthfeel... A really stripped back beer... we are loving it. If I had to put it in a place, I would liken it to Saison Dupont with Motueka... and a little Fantome as its going to develop in bottle b/c, as you know, our culture's brett will eventually present itself... but at this stage it's looking fresh.

Not heaps of this in the first release, but I think this will be a regular on the circuit.

The base beer is brewed entirely with NSW-grown regenerative certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw red wheat with organic Schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and organic Motueka (NZ) hops. Finally, it was fermented with our house culture of microflora wholly foraged from native flowers in NSW. It was bottled on 18 January 2023 and naturally conditioned through refermentation for 6 weeks. At bottling it was 5% ABV.

Luke's tasting notes

Hoppy nose, lime and lemon with tropical notes. Soft citrus blossom and brown spices add some interesting high notes. A core palate of hop, earthy grains and fermentation esters. Cereal, passionfruit and sweet citrus really shine. A touch of spice leads to a cleansing orange citrus bitterness and flavoursome finish.

And like all our beers, Dreamin' is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
