Wildflower ⍺lpha- Tasting Notes

We are excited to announce that Wildflower ⍺lpha will be available at our cellar door and online (at 9am) on Saturday 9, September 2017. ⍺lpha is an unblended ale aged in oak barrel for one year with Brett, Lacto and Pedio. The beer has a super savoury and complex nose. More toasty oak aromas intertwining with secondary citrus complexity and oak spice (vanilla). Very engaging as it continually pulls you back to the glass. The palate strongly reflects the nose. Smooth and textually weighty (glycerol) palate, biscuity and almond mealy (time on lees/yeast autolysis) mid palate. Toasty, marmalade tending to a dry phenolic finish. Wildflower Amber Blend #5- Tasting Notes

We are excited to announce that Wildflower Amber Blend #5 will be available at our cellar door and online (at 9am) on Saturday 9, September 2017. Aromas of salted caramel, baked chocolate cake and robust spices of cinnamon, nutmeg and cola (sarsaparilla) are well complemented by more complex subtle earthy, bready, grainy aromas. A heady, comforting amber nose. Excellent palate. Earthy grainy flavours are strong and lifted by hints of coffee and cherry liquor. The firm yet moreish acid, drives the full rich palate to an impressive length that finishes with lingering cola and hazelnuts. Overall, a more integrated and seamless amber blend, with wonderful balance and moreishness providing instant appeal. Amber is a blended, barrel aged Australian Wild Ale. Wildflower Gold Blend #6- Tasting Notes

We are excited to announce that Wildflower Gold Blend #6 will be available at our cellar door and online (at 9am) on Saturday 9, September 2017. A highly expressive and aromatically complex nose, dominated by spices of clove and vanilla, cut straw and dried flowers (summer fields). Cut through by wonderfully clean precise orange citrus fruit (mandarin, tangelo and orange blossoms). A focussed taut palate, brimming with zesty citrus flavours that transition seamlessly to a mid palate of funk and balanced acidity. The long and persistent palate finishes with hints of vanilla and lemon meringue pie (biscuity oak). Dry cleansing bitterness. We are excited to announce that Wildflower Amber Blend #4 will be available at our cellar door and online (at 9am) on Saturday 12, August 2017. Amber is a blended, barrel aged Australian Wild Ale. Blend #4 is a blend of two barrels, 1604 and 1715. The beer in 1604 was brewed in early April 2017 and racked into the barrel on the 7th of the month. 1715 was filled with our second batch of Amber brewed in the middle of February. The aroma of this blend has notes of wet stone minerality, tidal pool seaweed, chocolate, toast, cocoa powder with emerging aromatics of bready, yeasty/chocolate cake-mix. The palate is generous with emerging roasted/cooked spice, sweet malt, red fruits (especially cherry liquor), and a balanced, rounded acidity. It finishes with a clean oaky, tea-like end. As...

Blend #5 is a blend of two barrels, 1603 and 1719. The beer in 1603 was from our first ever batch of Gold brewed in late December of 2016. It spent over 6 months in oak. 1719 was from our fourth batch of Gold brewed in late March, 2017. This barrel is pretty special to us... it has as of yet, been filled and emptied 5 times already and it has been lending us some consistent flavours of our house culture. We are excited to announce that Wildflower Amber Blend #3 will be available at our cellar door and online (at 9am) on Saturday 15, July 2017. Amber is a blended, barrel aged Australian Wild Ale. Blend #3 is a blend of two barrels, 1703 and 1718. The beer in 1703 was brewed in early January 2017 and racked into the barrel in the middle of the month. The wort for this beer was quite pale and picked up colour from a 3 hour boil. At blending, the barrel was was tasting similar to its sister 1704 which was in Blend #2. 1718 was filled with our second batch of Amber brewed in the middle of February. Over its three months in barrel, the roasty flavours integrated more fully to be slightly richer...

We are excited to announce that Wildflower Gold Blend #4 will be available at our cellar door and online (at 9am) on Saturday 15, July 2017. Gold is a blended, barrel aged Australian Wild Ale. Blend #4 is a blend of two barrels, 1601 and 1714. The beer in 1601 was from our first ever batch of Gold, and 1601 was actually the first barrel we ever racked into here at Wildflower, so how about that, it spent over 5 months in oak. At blending, this barrel was showing the creamy, moreish, savoury barrel character signs I wanted as a background for Gold. The acid levels were pretty subdued and it had a nice subtle roundness. 1714 was from our third batch of Gold brewed on Feb 2,...
