Amber Blend #30 - Tasting Notes

Amber Blend #30 - Tasting Notes

We are excited to announce that Wildflower Amber Blend #30 will be available online and for take-away/collection from 12pm (Sydney time) on Friday 5 February 2020.

Amber is a blended, barrel aged Australian Wild Ale. Amber Blend #30 is a blend of six barrels - 1713 (29 month old Amber), 1743 (19 month old Amber), 1764 (30 month old Amber), 1809 (10 month old Amber), 1830 (29 month old Amber) and 1846 (25 month old Amber).

At release this blend shows its age. Warm comforting aromas of fresh toasted bread, sweet dried fruits, soft cocoa/milk chocolate. Darker hits of oak and cola. The palate has a beautiful balance of malt sweetness and acidity full of raisins, chocolate and cinnamon spice. Oak flavours persist throughout the palate and  lend great length and flavour to the finish.

The base beer is brewed entirely with Organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw Red wheat with Organic Schooner barley malted to Munich, Vienna and chocolate roasts by Voyager Craft MaltIt is made with filtered Sydney water and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 14 October 2020 and naturally conditioned through refermentation for 16 weeks. At bottling it was 6.0% ABV, 18 IBU and 1.9°P (FG = 1.008 SG).

Like all our beers, Amber Blend #30 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).

Enjoy.
