Wildflower Good as Gold Blend #20 will be available online and for take-away/collection at our cellar door from 12pm (AEST) on Friday 2 February 2024.
Good as Gold is a 50/50 blend of barrel aged and fresh ales both wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. Bright citrus and limey Motueka hop notes on the nose balance with structure and length from aged, oakier barrels.
We brew with regenerative organic grains at our old-world brewery in Marrickville where the beer undergoes a warm primary fermentation with our house culture from NSW flowers. We taste and select the most mature barrels from our cellar which would benefit from the youth and aroma of a younger fermentation, blend the two in equal parts, bottle this blend and allow the beer to naturally condition and carbonate for an additional 3 months minimum before release.
Meesh's tasting notes
The nose gives all sorts of sweet, ripe fruit - peach skin, mango, papaya - followed by a touch of funk and some oak, giving it real depth. The palate is bright with citrus and a racy zip of acid. There's even more fruit on the mid palate and a tight hop bitterness to bring it to a close.
The base beer is brewed entirely with regenerative organic grains grown by Sam and Chris Greenwood in Coleambally, New South Wales, Organic Schooner ale malt and organic raw red wheat thanks to Voyager Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture of microflora wholly foraged from native flowers in NSW. It was bottled on 28 April 2023 and naturally conditioned through refermentation for 40 weeks. At bottling it was 5.0% ABV, 25 IBU and 1.3°P (FG= 1.004 SG).
Like all our beers, Good as Gold Blend #20 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
