Gold Blend #38 - Tasting Notes

Wildflower Gold Blend #38 will be available online and for tasting and take-away/collection at our cellar door from 12pm (Sydney time) on Friday 3 February 2023

Gold is a soft, balanced barrel aged ale wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. Gold Blend #38 is a blend of five barrels, 1776 (8 month old Gold), 1803 (14 month old Gold), 1772 (17 month old Gold), 1904 (11 month old Gold) and 2026 (7 month old Gold).  

"Intense nose, thick and heavy with sweet tropical fruits, melon and citrus. There’s a strong lick of oak too, golden syrup richness and weight vying with dark earthy spice. The full flavours roll through the palate, dried flowers, marmalade, peach and oak. It’s savoury and long with vinous citrus and tempered acidity on the finish." - Luke.  

The base beer is brewed entirely with regenerative certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw red wheat with organic schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Organic Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 23 February 2022 and naturally conditioned through refermentation for 11 months. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).

Like all our beers, Gold Blend #38 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
