Gold Blend #37 - Tasting Notes

Wildflower Gold Blend #37 will be available online and for tasting and take-away/collection at our cellar door from 12pm (Sydney time) on Friday 2 September 2022

Gold is a blended, barrel aged Australian Wild Ale. Gold Blend #37 is a blend of five barrels, 1870 (17 month old Gold), 1908 (1710 month old Gold), 1710 (5 month old Gold), 1744 (24 month old Gold) and 1768 (16 month old Gold).  

Sublime nose... sherbety orange citrus and beautiful vinous elements of almond meal and savoury French oak. Sweet stone fruit and mild funk add depth and intrigue at the finish. Seamless palate, upfront pear skin and citrus with a firm earthy spice drive. There are some richer flavours of stone fruit through the mid palate before turning savoury, with oak and sweet spice to close. Beautifully balanced and incredibly moreish. 

The base beer is brewed entirely with certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw red wheat with organic schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Organic Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 6 January 2022 and naturally conditioned through refermentation for 8 months. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).

Like all our beers, Gold Blend #37 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
