Topher's production notes
Distinctly Perceived is a golden barrel aged ale wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW macerated with white wine grape pomace.
In 2023 it was made as a blend of golden mixed culture ales aged on Riesling and Viognier pomace from Ravensworth Wines in Murrumbateman, NSW. The name makes reference to René Descartes’ philosophies on optics and colour.
The base beer is brewed entirely with certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw red wheat with organic schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Motueka (NZ) hops. Finally, it was fermented with our house culture of microflora wholly foraged from native flowers in NSW. It was bottled on 10 August 2023 and naturally conditioned through refermentation for 12 weeks. At bottling it was 5.6% ABV and 10.0°P.
Meesh's tasting notes
All white fruit on the nose...pear, sweet apple and nectarine. A richer note of Viognier shines through. The palate has lovely shape, super textural. Round and plush up front, it finishes with an elegant spicy skins character and some zippy acid.
Like all our beers, Distinctly Perceived 2023 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
