Wildflower Gold Blend #15- Tasting Notes

We are excited to announce that Wildflower Gold Blend #15 will be available at our cellar door and online (at 2pm) on August 3, 2018.

Gold Blend #15 has classic aromas of fresh citrus zest and ginger spice mingled with an aromatic vanilla lift. These characters are backed by a wave of bold funk. A palate loaded with intense citrus and earthy spices but with a wonderful textual weight. A complex back palate of cellar funk provides great persistence and dryness. A very complicated, intense and serious gold blend. The level of funk stands out in particular.

Gold is a blended, barrel aged Australian Wild Ale. Blend #15 is a blend of four barrels. 1601 (6 month old Gold), 1726 (8 month old Gold), 1741 (10 month old Gold) and 1769 (5 month old Gold).

The base beer is brewed entirely with New South Wales cereals: Single Origin (S.O.) Moree, NSW grown Gairdner ale malt and North Star, NSW grown Spitfire S.O. raw wheat thanks to Provenance Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on April 18 2018 and naturally conditioned through refermentation for 15 weeks. At bottling it was 5.0% ABV, 25 IBU and 0.5°P (FG= 1.002 SG).

Like all our beers, Gold Blend #15 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
