We are excited to announce that Wildflower Gold Blend #12 will be available at our cellar door and online (at 1pm) on Friday 6, April 2018.
Gold Blend #12 has an overall woody/earthy spice and aged theme. It opens with a classic spicy, grain and straw nose which developed into a preserved lemon washed rind cheese funk. The mid-palate bursts with a fresh citrus, mandarin heavy. It finishes bone dry with a rounding oak component. More dramatically than other, this Gold blend evolves in glass over time later giving great indications of age and wild yeast funk.
Gold is a blended, barrel aged Australian Wild Ale. Blend #12 is a blend of four barrels. 1719 (5 month old Gold), 1722 (5 month old Gold), 1740 (A barrel of reclaimed Gold Blend #2) and 1745 (7 month old Gold).
The base beer is brewed entirely with New South Wales cereals: Single Origin (S.O.) Moree, NSW grown Gairdner ale malt and North Star, NSW grown Spitfire S.O. raw wheat thanks to Provenance Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on January 23 2018 and naturally conditioned through refermentation for 10 weeks. At bottling it was 5.0% ABV, 25 IBU and 0.8°P (FG= 1.003 SG).
Like all our beers, Gold Blend #12 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
