Foggy Morning #4 - Tasting Notes

Wildflower Foggy Morning #4 will be available online and for tasting and take-away/collection at our cellar door from 12pm (Sydney time) on Friday 4 June 2021.

Foggy Morning is an Australian Wild Ale made with 100% smoked malt from Voyager Craft Malt, Whitton NSW. This fourth iteration, like the third, utilises Red Gum for its smoke character rather than the stringy bark smoke which the first two editions were made with. To us, this has leant a more peaty aroma to start than the campfire overtones of the first two.

This fourth batch of Foggy Morning was brewed in July 2020 and rested in barrel for 7 months before selection, blending  and bottling in February 2021. At bottling it was 4.0% ABV and 1.9P (1.008 SG).

Batch 4 opens with familiar aromas of peat and twiggy campfire, cooking spice and cedar. The palate draws more on the smoked meats, ham and pastrami. Warmer and more textual than the nose the palate is long and persistent. Memories of Beachside camping trips.

Like all our beers, Foggy Morning is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
