Wildflower St Walter 2022: Black Muscat will be available online and for tasting and take-away/collection at our cellar door from 12pm (Sydney time) on Friday 3 February 2023.
The third and final ale for the St Walter 2022 cuvees, this variant is made with 260kg of whole bunch Black Muscat grapes from Thornbrook Orchard in Nashdale, NSW. The whole bunches were left to air-dry after picking to concentrate sugars before a 3 month maceration and refermentation of fruit and beer. It was then bottled and allowed to naturally carbonate and mature for 6 months before release.
"Sweet fruited nose. Jammy red fruits but lifted by the unmistakable muscat characters. Roses, lychee and musk. With more depth and substance the perfume is powerful. An intense palate with sweet perfumed red fruits, plums, raspberry, strawberry in concentration. There’s grip and herbaceous from the stalk. Red confectionery, violets and grape drive a broad rich palate. It’s a gentle finish, with bitterness over acidity giving a soft fruity close" - Luke.
The base beer is brewed entirely with NSW-grown regenerative certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw red wheat with organic Schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture of microflora wholly foraged from native flowers in NSW. It was bottled on 12 August 2022 and naturally conditioned through refermentation for 25 weeks. At bottling it was 6.6% ABV.
And like all our beers, St Walter 2022: Black Muscat is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
