How's the Serenity #2 - Tasting Notes

The second batch of our beloved How's the Serenity will be available online and for take-away/collection from 12pm (Sydney time) on Friday 4 February 2022.

Inspired by one of our all time staff favourite beers, a certain Adelaide based sparkling ale, this is an arranged marriage of this certain wort with our house culture that has made for a match we love.

A sparkling Australian Wild Ale made with organic malted schooner barley (AU), organic black patent malt (AU), organic raw sugar (AU) and Pride of Ringwood hops (AU).

The second batch saw an entirely stainless steel fermentation, a higher starting gravity resulting in a more alcoholic beer (6.2%) and a higher dosage at bottling for a more effervescent drink.

It is immediately ester driven, a crisp palate and earthy bitterness in spades. It's a near perfect beer for me, genuinely, and if I get my way, we will be making this cuvee for many years to come.

The name of this beer, along with many of our other green bottle saison-inspired ales, come out of the book of Australian sayings. Quite obviously, its a quote from the 1997 comedic masterpiece that is The Castle.
