A young Australian Wild Ale made with the perennial cereal grain GT235A grown by the NSW Department of Primary Industries in Cowra, NSW. Fermented and aged in a single puncheon before bottling, conditioning and maturation ahead of release.
The third and final release of our trio of young beers made with perennial grains. This one, like Mountain Rye that came before it, is named after the perennial grain itself, GT235A. Admittedly it is not nearly as cool as 'Mountain Rye' but I kind of liked it anyway so we rolled with it and here we are.
Brewed in April 2021 with a grist of organic malted barley and approximately 15% raw, unmalted perennial grain. Hopped in kettle with German Hallertau Blanc and New Zealand Motueka then fermented with our house culture to dryness for six weeks ahead of bottling.
At release it shows hop derived earthy spice, deep earth notes of clay and dark spice. Grass, winter mint, sweet fresh cut hay bale. Touches of citrus. Simple and refreshing. Bright citrus with poppy carbonation. Low but citrus laden acidity with a hoppy punch to close.
