Gold Blend #32 - Tasting Notes

Wildflower Gold Blend #32 will be available online and for take-away/collection from 12pm (Sydney time) on Friday 6 August 2021.

Gold is a blended, barrel aged Australian Wild Ale. Gold Blend #32 is a blend of 4 barrels, 1705 (11 month old Gold), 1718 (13 month old Gold), 1813 (11 month old Gold) and 1833 (13 month old Gold).  

A four barrel blend, immediate sweetness, citrus, vanilla and a deep brooding spice on the nose. Palate is on point. Complex and vibrant juicy citrus giving serious drive. A finesse and power that transitions from fruit to oak and funk seamlessly. Savoury and spicy, the oak adds beautiful layers and draws the palate right out. A standout blend.

The base beer is brewed entirely with Organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw Red wheat with Organic Schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on 20 January 2021 and naturally conditioned through refermentation for 6 and a half months. At bottling it was 5.0% ABV, 25 IBU and 1°P (FG = 1.004 SG).

Like all our beers, Gold Blend #32 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
