Wildflower Tom 2019

Tom is a table beer aged on the second use sour Morello cherries from St Thomas 2019.

After racking the final beer off the cherry refermentation in mid-April, we decided to do a small test of macerating a portion of a freshly brewed table beer on the cherries. Our intention was to match the lighter fruit character we would receive from the second use fruit with the lighter alcohol and more ester driven table beer. The two were left together for 3 weeks before being packaged in mid-May 2019. Tom is a 3.5% refreshing, lightly 'cherried' table beer we have fallen totally in love with.

Tom is packaged in 750ml bottles and there are 180 bottles. We will make 100 bottles available online with a limit of 3 bottles per person.
