St Florence is named after Topher and his wife's first daughter. Saint Florence was a 7th century abbess from Cartagena, Spain. In 2020, this variant was made with golden mixed fermentation, barrel aged beer and 500kg of hand picked Semillon grapes from Tyrrell's in Pokolbin, NSW.
