A collaboration between the grain farmers [Organically Greenwood, (Coleambally, NSW)] maltsters [Voyager Malt (Whitton, NSW)], hop farmers [Ryefield Hops (Bemboka, NSW)] and and ourselves. Our release of this beer in 2017 marked the first commercial release of a beer made entirely of NSW ingredients, the 2021 vintage marks the fourth.
Brewed in 2021, bottles in August 2022 and left to rest for over two years in bottle, we regard this release of Waratah as a sort of Reserva Release. I have always thought Waratah was a sort of elder sibling to Gold with more honey on the palate and more oak. This small bottling, only available online at at Cellar Door, carries on that tradition but to another level with the extended bottle ageing.
Waratah was always a very important beer to us, and this release is likely our last, as after making this beer, we transitioned our culture to be 100% from NSW yeast and bacteria, hence every beer we make with Ryefield hops is essentially a 'Waratah' beer.
Tasting notes by Meesh: The nose showcases plenty of Gold-esque tropical fruit, but with a slight oxidative character which is giving way to deeper notes of honey, oak and candied orange. The palate is light and broad with a cleansing acid on the finish. It is fresh, with a present bitterness, almost gueuze-esque in its texture.
